Try this rich and creamy holiday drink! This plant-based, sugar-free, dairy-free treat is loaded with flavor and reminiscent of the holidays.
That's all you need for this one is a high-speed blender and it's just one step, so it's very fast and easy. The hardest part about this recipe is breaking into a Thai coconut, but the good news is, you can substitute coconut cream, which makes it a breeze. Combine all ingredients in high speed blender. Run on high speed until smooth (about 1 minute). Enjoy warmed or cold.

Ingredients:
Please buy organic ingredients whenever possible, for you and the planet! 3/4 cup almond flour 1/4 cup tapioca flour 2 tsp. baking powder 3 Tbsp. monk fruit (or 4 dates blended with 1/4 cup water) 1 Tbsp. ground flax seed 2 Tbsp. ground chia seed 3/4 cup water 1 Tbsp. coconut oil 1 tsp. vanilla powder or vanilla extract 2 cups blueberries (fresh or frozen) 1/3 cup almond flour 1/3 cup hemp seed 2 Tbsp. monk fruit 1/2 tsp. ground cinnamon 1/4 tsp. ground nutmeg 1 Tbsp. water 1 Tbsp. coconut oil Combine 3/4 cup almond flour, tapioca flour, baking powder, 3 Tbsp. monk fruit, ground flax and chia in large mixing bowl. Stir 3/4 cup water, 1 Tbsp. coconut oil and vanilla gently into the above dry ingredients in mixing bowl until well combined. Pour batter into greased 9" round or square pan or pie pan. Top with blueberries. Combine 1/3 cup almond flour, hemp seed, 2 Tbsp. monk fruit, cinnamon, nutmeg, 1 Tbsp. water and 1 Tbsp. coconut oil and mix with fork until crumbly. Sprinkle over berries. Bake at 350°F for 40-45 minutes until golden brown.

This lentil loaf is really fast and easy to make. I pressure cooked the lentils, but you can also used canned lentils if you want to make it super easy.
