Tomato Catch-Up (makes 5 cups)
1/2 cup (120 ml) sun-dried tomatoes, soaked in water for 15 minutes
1 red pepper, seeds removed and cut into 1 1/2” pieces
1/3 cup (75 ml) sesame seeds (soaked & dehydrated from staple stash)
1 Tablespoon (15 ml) chickpea miso or 1/4 oz. dulse
1 clove garlic, removing core or 4 garlic greens
2 Tablespoons (30 ml) fresh-squeezed lemon juice
1 Tablespoon (15 ml) ground flax seed
4 dates, soaked 15 minutes, pitted
1 Tablespoon (15 ml) paprika
Drain tomatoes and sesame seeds. Place all ingredients in high-speed blender and blend on high until smooth. Add water if necessary to reach the desired consistency. Freezes well in ice cube trays.
