So much has changed in the world of health since I started the Transitioning to Living Cuisine (TLC) Raw Food Program over a decade ago. Recent research showing how important a diverse microbiome is to our overall health and even our brain health and happiness has inspired me to expand my program. Keeping our good gut microbes happy with plant-based nutrition, fermented foods, breath work, and exercise is now a major part of the program. We will also learn how to overcome addictions, digestive issues, arthritis, fibromyalgia, cardiovascular disease, diabetes and other autoimmune diseases and reach a healthy weight.

Many people are told they need to eat less meat, dairy, sugar and salt. They are also told they need to eat more fruits and vegetables by their well-meaning health care providers. The problem is they aren’t told how to create healthier recipes and how to choose healthier options. That is why I created this program. I want to help you, your family and friends.
I’m providing a new program that works for everyone. We are all different and have diverse needs for optimum health. We will be focused on finding the optimum diet for every individual. All of the recipes we will be making are vegan, wheat-free, gluten-free, sugar-free, dairy-free and non-GMO. We buy all organic ingredients when possible and only use conventional produce that is on the Environmental Working Group’s “Clean-15” list.
We create healthy, delicious meals three times a day, with lots of health-related discussions, time for rest and relaxation, and even a day trip to the ocean. With all the hours I have spent in the kitchen, I have learned how to create nutritious, easy to make creations that anyone can put together. You don’t have to have any special skills to flourish in this program.

More about our location:
We are located on three acres in Deltona, Florida, 30 miles from Orlando, 25 miles from New Smyrna Beach and only two miles from Green Springs Park. We are right off the East Central Regional Rail Trail, a beautiful 50 mile paved bike trail.
We have a refreshing pool and a peaceful pond. There’s also a butterfly garden and various vegetable gardens throughout the property.
The property is pesticide free, smoke-free, vape-free, and perfume-free (we ask that others also refrain from wearing perfume or using scented products in the home).
There are five shared bedrooms and three shared bathrooms. Private rooms may be available at an additional fee. We also offer group discounts.

Guests are welcome to go on nature walks, bike rides, swim in the pool, or take a tennis lesson with our certified tennis pro! Tennis racquets and bicycles are provided. There will also be time to relax, reflect and reconnect with nature.
We go on a trip to New Smyrna Beach once during every retreat for lunch and a swim.

- 70 minutes to Disney World or Universal Studio
- 40 minutes to New Smyrna Beach
- 75 minutes to Cocoa Beach
