Fettuccini Rawfredo (makes 2 cups of sauce)
If you love traditional Fettuccine Alfredo, try this health-healthy version. If you are not ready for the complete transition to this recipe, combine with your usual Alfredo recipe and gradually decrease the quantity of your original Alfredo recipe while increasing the quantity of this Rawfredo recipe, until you transition to using only the Rawfredo. Rawfredo Sauce Ingredients-
1 medium zucchini, peeled and cut into 1 1/2” (3.8 cm) pieces
2 stalks celery, cut into 1 1/2” (3.8 cm) pieces
1/2 cup (120 ml) raw cashews
1/2 cup (120 ml) raw macadamia nuts
1/2 cup (120 ml) hemp seeds
1 large clove garlic
1/4 teaspoon (1.25 ml) dry mustard
1/4 teaspoon (1.25 ml) ground white pepper
1 Tablespoon (15 ml) fresh-squeezed lemon juice
1 Tablespoon (15 ml) chickpea miso or 1/2 teaspoon (2.5 ml) Himalayan salt
Place above ingredients in high-speed blender. Run on high speed with tamper until cheese sauce consistency. Add water if necessary to reach desired consistency.
"Fettuccini" noodles-
Zucchini
Chives
Peel zucchini into long strips with a vegetable peeler to make flat Fettuccine-type noodles, until you reach the center part with seeds. Pour sauce over zucchini noodles and sprinkle with chives.
