Cauliflower Mash (makes 6-8 servings)
1 medium cauliflower, cut into 1 1/2” pieces
1 cup (240 ml) cashews
1 stalk of celery, cut into 1 1/2” pieces
1 clove of garlic, removing core
2 Tablespoons (30 ml) lemon juice
1 Tablespoon (15 ml) chickpea miso or 1 teaspoon Himalayan sea salt
1 Tablespoon (15 ml) olive oil
1 teaspoon (5 ml) onion granules
1/4 teaspoon (1.25 ml) white pepper
Place above ingredients in high-speed blender. Run until smooth. Enjoy by itself or with any gravy or sauce of your choice (I like the Savory Gravy).
