Carob Snowballs (makes 4 dozen)
1 cup (240 ml) sunflower seeds (soaked & dehydrated from staple stash)
1/2 cup (120 ml) buckwheat groats (soaked & dehydrated from staple stash)
1/4 cup (60 ml) sesame seeds (soaked & dehydrated from staple stash)
1/4 cup (60 ml) raw carob powder
4 apples, cored and cut into 1 1/2" pieces
1 cup (240 ml) raisins, soaked in water for 15 minutes
4 large dates, soaked for 15 minutes, pits removed
2 teaspoons (10 ml) vanilla powder
Place above ingredients in food processor with S-blade. Process until finely chopped. Transfer to mixing bowl.
1 cup (240 ml) shredded coconut
Form into 1 inch balls and roll in coconut. Chill.
