Blueberry Coffee Cake
Ingredients:

3/4 cup almond flour
1/4 cup tapioca flour
2 tsp. baking powder
3 Tbsp. monk fruit (or 4 dates blended with 1/4 cup water)
1 Tbsp. ground flax seed
2 Tbsp. ground chia seed
3/4 cup water
1 Tbsp. coconut oil
1 tsp. vanilla powder or vanilla extract
2 cups blueberries (fresh or frozen)
1/3 cup almond flour
1/3 cup hemp seed
2 Tbsp. monk fruit
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1 Tbsp. water
1 Tbsp. coconut oil
Combine 3/4 cup almond flour, tapioca flour, baking powder, 3 Tbsp. monk fruit, ground flax and chia in large mixing bowl.
Stir 3/4 cup water, 1 Tbsp. coconut oil and vanilla gently into the above dry ingredients in mixing bowl until well combined.
Pour batter into greased 9" round or square pan or pie pan. Top with blueberries.
Combine 1/3 cup almond flour, hemp seed, 2 Tbsp. monk fruit, cinnamon, nutmeg, 1 Tbsp. water and 1 Tbsp. coconut oil and mix with fork until crumbly. Sprinkle over berries.
Bake at 350°F for 40-45 minutes until golden brown.
