Cranberry Fruit Salad

​Yes, there are cranberries in this salad, but it's not the predominant ingredient, so you just get the wonderful taste without the "pucker"!

Cranberries are high in Vitamin C and fiber and are only 45 calories per cup. They are also great for our beneficial gut bacteria and eating cranberries helps prevent urinary tract infections. They are high in antioxidants and anti-inflammatory properties which helps our brain power and flexibility and coordination. They are also good for our skin, teeth and heart and they even help prevent tumor growth and have a positive effect against several cancers!  

Hope this recipe helps you find a new love for cranberries!

That's all you need for this recipe is a food processor and a knife. It's fast and easy to make. The hardest part about it is slicing the pineapple, but the good news is, you can purchase fresh-cut pineapple in most grocery stores, which makes this recipe super easy.

It's best to make this recipe a day or two before you serve it for the best flavor.

Ingredients:​
Please buy organic ingredients whenever possible, for you and the planet!
​Step One
  • 8 dates, soaked in water for 15 minutes, pitted
  • 1 cup fresh or frozen cranberries
  • 2 oranges, peeled, seeded

Step Two 
  • 2 stalks celery, finely chopped
  • 4 cups fresh pineapple, coarsely chopped
  • 1/2 cup raisins
  • 1/2 cup walnuts, coarsely chopped
  • 2 teaspoons ground chia seed
  • 2 tablespoons lemon juice
  • 2 teaspoons ginger juice* or 1/4 teaspoon ginger powder
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon five-spice powder
  • 1/8 teaspoon sea salt
Directions: 
  1. Place the ingredients from Step 1 in food processor with S-blade and process until coarsely chopped.
  2. Transfer to a large mixing bowl.
  3. Stir the ingredients from Step 2 into the mixture in the large bowl.
  4. Chill until ready to serve. It's best to refrigerate at least 24 hours before serving for the best flavor.
