Chia Breakfast Boost

Here's a breakfast idea you can make ahead of time for those hurried morning times.

Ingredients: 
1 tablespoon chia seeds
1 tablespoon ground flax seed
1 tablespoon almonds, chopped
1 tablespoon hemp seeds
1 tablespoon pumpkin seeds
1 tablespoon shredded coconut
1 tablespoon raisins (or any of your favorite dried fruit)
1-2 teaspoons of monk fruit (optional for added sweetness)
1 teaspoon cinnamon
1/4 teaspoon five spice powder (optional)
1 teaspoon maca (optional)
1/2 cup coconut milk
1 tablespoon coconut oil

Directions: 
  • Combine all of the first 11 dry ingredients together.
  • Stir in the coconut milk and coconut oil.
  • Let sit for 30 minutes or overnight in the refrigerator. 
  • When ready to eat top with your favorite fruit and additional milk or water if necessary to thin to your desired consistency. 

If you would like it warm place in dehydrator at 150°F for about 15 minutes or warm over low heat on stove, stirring constantly until warm. 

If you enjoy this breakfast and want to make it even easier, fill several snack size ziplock bags with the first 11 dry ingredients listed and store in the refrigerator or freezer for your daily breakfast. Then just grab a bag and pour the contents in a bowl with the coconut milk, coconut oil and your favorite fruit topping. This saves so much time. It's a fun thing to do while listening to a podcast or TED talk! Hope you love it!

Happy New Year, Rene! This is Susan RN from Michigan, purchased many of your books years ago! and love your kind presence! TY for The Grateful Way! Love that it's free, but I'm sure you could have a subscription fee. Also, your counter top is gorgeous, though hard to make out ingredients in the prep bows. Maybe you want to have something white underneath bowls for filming? Just a thought. Will look forward to more plant based love! I've passed your site onto a co-worker.
