Chai Holiday Smoothie

Try this rich and creamy holiday drink! This plant-based, sugar-free, dairy-free treat is loaded with flavor and reminiscent of the holidays.  

That's all you need for this one is a high-speed blender and it's just one step, so it's very fast and easy. The hardest part about this recipe is breaking into a Thai coconut, but the good news is, you can substitute coconut cream, which makes it a breeze. Hope you love this recipe and it brings back great holiday memories for you.

Ingredients:
Please buy organic ingredients whenever possible, for you and the planet!

  • Pulp from one Thai coconut or 1/4 cup coconut butter
  • 1/2 cup raw* pumpkin, cut into 1/2” chunks (or 1/2 cup steamed), optional
  • 3 cups water (use water from Thai coconut plus filtered water)
  • 1/4 cup almonds
  • 1/4 cup sesame seeds
  • 4 dates, soaked in water for 15 minutes, pitted
  • 1 teaspoon vanilla powder or vanilla extract
  • 1-2 teaspoons fresh ginger juice (or 1/8-1/4 teaspoon ground ginger)
  • 1/2 tsp ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon five-spice powder (or 1/8 teaspoon cardamom and 1/16 teaspoon cloves (optional)
  • 1/8 teaspoon sea salt
  • 3 bananas, peeled and frozen

Directions:
Combine all ingredients in high speed blender.
Run on high speed until smooth (about 1 minute).
Enjoy warmed or cold.
