Alkalizing Immune Booster

​This is one of my favorite recipes for my first meal of the day, which is a good time to eat a light meal to ease into digestion and to rehydrate.

This is also a great idea for people who are not feeling well. It helps them to stay hydrated while giving the digestive system a break from digesting heavier meals.  This allows the body to spend it's energy on healing instead of digesting, which is the reason we don't have an appetite when we are sick.

Ingredients:
1 cucumber (peeled and seeded if you are sensitive to lectins)
1 granny smith apple* (use every part of the apple except the stem)
2 stalks celery
1 handful (or more) of sprouts and/or leafy greens

Thinly sliced ginger to taste (I love ginger and use about 1-2")
1/2 tsp. ground cinnamon (optional)
1/8 tsp. ground nutmeg (optional)

Coarsely chop all ingredients.   
Blend the cucumber in high-speed blender for a few seconds, until liquefied.  Add remaining ingredients and blend for a few seconds until smooth.  Eat as it is or pour 20-30% of the contents into a juice bag and squeeze out the juice into a medium bowl if it is more fiber than you are used to.  Pour the remaining blended ingredients into the bowl. Top with cinnamon, nutmeg and more sprouts or chopped greens if you like.

*I use a granny smith apple in this recipe, but any apple is great.  I prefer granny smith since they are not as sweet as other apples and they have more non-digestible dietary fiber, therefore feeding the beneficial bacteria in our digestive tract, increasing our serotonin levels, which make us happier!  It's also beneficial to eat all parts of the apple (except the stem), since the core of the apple has the most prebiotics of the entire fruit! 

You can use any greens you have for this recipe.
