Is Nutella really a part of a healthy breakfast? Can you believe it has more sugar in it than chocolate icing?
Here's a quick and easy, healthy recipe that you can make in less than a minute in your Vitamix (or other high-speed blender)! Ingredients: 2 cups (480 ml) raw hazelnuts* 1 ripe banana ¼ cup carob powder (or cacao powder) 2 teaspoons (10 ml) vanilla powder or vanilla extract 6-8 large dates, pitted (soak in water for 15 minutes if they are not moist) 1 Tablespoon (15 ml) coconut butter or coconut oil Combine all ingredients in Vitamix blender and run on high speed with tamper until smooth. Refrigerate or freeze leftovers. *It is best to soak the hazelnuts for 8 hours to release the enzyme inhibitor and then dehydrate them at 110 degrees Fahrenheit for 24-48 hours or until crunchy. I would suggest roasting the hazelnuts only. It makes a huge difference, but don't soak as the nutrients will be dissolved from the dual process of soaking and then roasting.

Hi Jessica, Thanks for checking it out. I have found that they retain their flavor well as long as they are dehyrated after the soaking time. The soaking decreases the fat content and releases the enzyme inhibitor, making them easier to digest. However, you can skip that entire step if you aren't striving for the "raw" factor. It's still much healthier than the alternative and many people have told me they like it better. But you are right, it's not exactly the same taste. Hope you try it and let us know what you think.
